Seafood Rice
A saucy Portuguese-style seafood rice with tomato, coriander and a touch of piri-piri.
Ingredients
- 1 pack of Neutura Seafood Mix (900 g), thawed
- 300 g of carolino (medium-grain) rice
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 2 ripe tomatoes, grated
- 1 tablespoon of tomato purée
- 3 tablespoons of extra virgin olive oil
- 1 bay leaf
- 1 litre of hot water
- Fresh coriander, chopped
- Salt, black pepper and piri-piri to taste
Method
- Heat the olive oil in a wide pan and gently fry the onion, garlic and bay leaf until the onion is translucent.
- Add the grated tomato and the tomato purée and let it reduce for 5 minutes.
- Add the seafood mix and cook for 5 minutes, stirring. Season with salt, pepper and piri-piri.
- Pour in the hot water and bring to the boil. Add the rice and cook over a low heat, without stirring too much, for about 15 minutes, until the rice is cooked and the dish is still slightly soupy.
- Adjust the seasoning, sprinkle with coriander and serve straight away.
